Supper Club


Wow what a weekend!! Hubby and I hosted Supper Club here on Saturday night. So, this week we was busy preparing for eight couples to come for dinner. We have been in this supper club for three years and the first year we made everything from start to finish, well we have wised up and now have some things catered. So we can now enjoy it and it not consume our whole weekend.
So our menu consisted of Pesto-Feta Spread, Shrimp and Grits, Beef Tenderloin, green salad, asparagus, turtle cheesecake and a fun drink.

So here is the recipe for the spread-I served it with tortilla chips.

Fabulous Pesto-Feta Spread -Found in the above cookbook.

8 oz-cream cheese softened
2 oz. grated Parmesan Cheese
1/2 cup basil pesto sauce
5 Roma tomatoes, diced
1/2 cup chopped red onion
1/2 cup crumbled feta cheese

-Preheat oven to 350 degrees
-Spray shallow 2 -cup oval baking dish with cooking spray
-Mix cream cheese and Parmesan cheese, stir in pesto, mix well
-Stir in Roma tomatoes and red onion, mix well
-Place mixture in baking dish
-Sprinkle top with feta cheese
-Bake for 20 min. or until bubbly

Serves 8



This recipe was very yummy and rich. I love this cookbook, because they explain the recipes in a simple format and it is easy to follow along (for people like me)



For the salad I also got the dressing recipe from the above cookbook and it poured it over, lettuce (your choice), diced apples, walnuts, celery and red onion.



Tidewater Dressing

1/4 cup apple cider
4 teaspoons Dijon style mustard
2 tablespoons grated onion
1/4 teaspoon thyme
2 garlic cloves, pressed
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin olive oil
1/4 cup parsley

Serves 6

(I doubled the dressing recipe)


I wanted to think of a fun drink, so I got my cookbooks out and googled some, but hubby suggested Skip and Go Naked. It was a drink that he used to enjoy in high school and college. I was a little hesitant, but I really liked it. It was easy to drink and very refreshing!


Skip and Go Naked
6 pack of beer
1 liter of sprite
1 can of frozen lemonade
1/2 bottle of vodka


He asked what could we serve it in? A cooler he wondered? (college flashbacks) What was he thinking? We would serve beef tenderloin and a drink out of a cooler. Not happening, so my dear friend Happy Housewife came to the rescue with her beautiful punch bowl. It will be something I add to my wish list this year.

Supper clubs can be so much fun! But how can you not have fun with a drink called Skip and Go Naked?:)
